Broccoli and Cheese Omelets (4 Servings)

Ingredients:

  • 1 cup broccoli florets, chopped

  • 1 cup egg substitute

  • ¼ cup shallots, minced

  • 4 oz low-fat Swiss cheese, diced

  • Salt and pepper

  • Butter-flavored cooking spray

Directions:

  1. Microwave broccoli and shallots with water for 3.5 minutes.

  2. Cook egg substitute in a skillet, add cheese and broccoli mixture.

  3. Fold omelet, cook for 1-2 minutes, and season.
