Broccoli and Cheese Omelets (4 Servings)
Ingredients:
1 cup broccoli florets, chopped
1 cup egg substitute
¼ cup shallots, minced
4 oz low-fat Swiss cheese, diced
Salt and pepper
Butter-flavored cooking spray
Directions:
Microwave broccoli and shallots with water for 3.5 minutes.
Cook egg substitute in a skillet, add cheese and broccoli mixture.
Fold omelet, cook for 1-2 minutes, and season.
