Buffalo Chicken Chili

Ingredients:

  • 1½ lbs. chicken breasts, halved

  • ¼ tsp salt

  • ¼ tsp pepper

  • 2 cups chicken broth

  • 2 cans white kidney beans

  • 3 cups celery, chopped

  • 2 cups carrots, chopped

  • 2 cups onion, chopped

  • 1 tsp garlic, chopped

  • 1 tsp chili powder

  • 1 tsp cumin

  • ⅓ cup + 2½ tsp Frank’s RedHot sauce

  • ½ cup + 2 tbsp blue cheese

Directions:

  1. Cook chicken and veggies in a crockpot.

  2. Shred chicken, mix with hot sauce.

  3. Combine and top with blue cheese.
