Grilled Salmon & Avocado Salsa
Ingredients:
4 salmon fillets (about 6 ounces each)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
Avocado Salsa:
1 avocado, diced
1 small tomato, diced
1/4 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice
Salt and pepper to taste
Directions:
Preheat grill to medium-high heat.
Rub salmon fillets with olive oil, garlic powder, smoked paprika, salt, and pepper.
Grill salmon for 4-5 minutes per side or until cooked through.
While salmon is grilling, prepare the avocado salsa by combining all salsa ingredients in a bowl. Toss gently to combine.
Serve grilled salmon topped with avocado salsa.
