Grilled Salmon & Avocado Salsa

Ingredients:

  • 4 salmon fillets (about 6 ounces each)

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

Avocado Salsa:

  • 1 avocado, diced

  • 1 small tomato, diced

  • 1/4 red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 tablespoon lime juice

  • Salt and pepper to taste

Directions:

  1. Preheat grill to medium-high heat.

  2. Rub salmon fillets with olive oil, garlic powder, smoked paprika, salt, and pepper.

  3. Grill salmon for 4-5 minutes per side or until cooked through.

  4. While salmon is grilling, prepare the avocado salsa by combining all salsa ingredients in a bowl. Toss gently to combine.

  5. Serve grilled salmon topped with avocado salsa.
