Quinoa and Kale Salad

Ingredients:

  • 1 cup quinoa (rinsed)

  • 2 cups water or vegetable broth

  • 2 cups kale (chopped)

  • 1/2 cup cherry tomatoes (halved)

  • 1/4 cup red onion (thinly sliced)

  • 1/4 cup feta cheese (crumbled)

  • 1/4 cup sunflower seeds or slivered almonds

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

Instructions:

  1. Cook the quinoa: In a medium saucepan, bring water or vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until the liquid is absorbed and the quinoa is tender.

  2. While the quinoa is cooking, massage the chopped kale with a little bit of olive oil and a pinch of salt until it becomes tender.

  3. In a large bowl, combine the cooked quinoa, massaged kale, cherry tomatoes, red onion, feta cheese, and sunflower seeds or almonds.

  4. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss to combine and serve.
