Spaghetti Squash & Marinara Sauce

Ingredients:

  • 1 large spaghetti squash

  • 2 cups marinara sauce (store-bought or homemade)

  • 1 tablespoon olive oil

  • 1 clove garlic (minced)

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Grated Parmesan cheese (optional)

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Cut spaghetti squash in half lengthwise and scoop out seeds.

  3. Brush the inside with olive oil and season with salt and pepper.

  4. Place squash halves cut side down on a baking sheet and bake for 40-45 minutes, or until tender.

  5. In a saucepan, heat marinara sauce with garlic, basil, and oregano.

  6. Use a fork to scrape out the spaghetti squash strands into a bowl.

  7. Top with marinara sauce and sprinkle with Parmesan cheese, if desired.

  8. Serve hot as a low-carb pasta alternative.
