Spaghetti Squash & Marinara Sauce
Ingredients:
1 large spaghetti squash
2 cups marinara sauce (store-bought or homemade)
1 tablespoon olive oil
1 clove garlic (minced)
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Grated Parmesan cheese (optional)
Instructions:
Preheat oven to 375°F (190°C).
Cut spaghetti squash in half lengthwise and scoop out seeds.
Brush the inside with olive oil and season with salt and pepper.
Place squash halves cut side down on a baking sheet and bake for 40-45 minutes, or until tender.
In a saucepan, heat marinara sauce with garlic, basil, and oregano.
Use a fork to scrape out the spaghetti squash strands into a bowl.
Top with marinara sauce and sprinkle with Parmesan cheese, if desired.
Serve hot as a low-carb pasta alternative.
