Vegetable Frittata (4 servings)

Ingredients:

  • 1 cup egg substitute

  • 1 cup mushrooms, cubed

  • ½ cup onion, sliced

  • ½ cup bell pepper, cubed

  • 1 cup zucchini, cubed

  • ½ cup Parmesan cheese, grated

  • Cooking spray

Directions:

  1. Sauté vegetables in a skillet until softened.

  2. Add egg substitute, cook until set.

  3. Top with cheese, broil until browned.
