Vegetable Frittata (4 servings)
Ingredients:
1 cup egg substitute
1 cup mushrooms, cubed
½ cup onion, sliced
½ cup bell pepper, cubed
1 cup zucchini, cubed
½ cup Parmesan cheese, grated
Cooking spray
Directions:
Sauté vegetables in a skillet until softened.
Add egg substitute, cook until set.
Top with cheese, broil until browned.
